The goal is harmony and complexity: fruit, bitterness, and pungency held in balance, each carrying its own depth and character. In this form, it becomes more than an ingredient. It becomes a living food shaped by land, season, and craft.

A healthy olive tree, produces far less oil than most imagine.

In most years, a single olive tree harvested for quality yields about two bottles of extra virgin olive oil.

The higher the quality, the rarer the oil becomes.

Some are shared directly with the guardians who sustain the trees. Others are reserved for members of the grove community.

With deep knowledge and year-round dedication, our team cares for each grove’s rejuvenated soil, supporting biodiversity and allowing neglected trees to recover their natural balance. The goal is simple: to ensure the healthy development of every olive before the harvest even begins.

The Harvest

The harvest is guided by experience and a clear vision of the oil we intend to create. Olives are gathered selectively at the exact moment that preserves their aromatic complexity and phenolic richness.

Master Milling

Within an average of three hours of harvest, the olives are transformed in technologically advanced mills. Working together, master millers and professional tasters guide the process to reveal the fruit’s finest expression.

Freshness in Flight

Our oils are double-filtered and bottled at the source under controlled conditions. They are then air-shipped to preserve the freshness, vitality, and character of the harvest from Tuscany to the table.

Quality is not assumed.
It is measured.

Each harvest is shaped by the sensory vision of founder and professional olive oil taster Fil Bucchino.

Every expression is then verified by certified sensory panels and chemical analysis to confirm adherence to the standards that define real extra-virgin olive oil. The measurements do not replace craft. They confirm it.
