Sautéed Rapini with Burrata, Lemon, and Pistachios

Sautéed rapini with torn burrata, lemon, and pistachios on a pink platter

This recipe, adapted from my best-selling cookbook Easy Does It, is so simple it's almost more of an ingredient list than an actual recipe. I love it for that reason, but also because it really highlights the impact of Abandoned Grove on the flavours of a dish.

The bitter, almost funky rapini is almost mellowed, whereas the creamy, milk burrata picks up some peppery punch. It all works together so well, with crunchy pistachios, a squeeze of lemon and a drizzle of hot honey to round things out.

2 bunches rapini

3 tablespoons (45 mL) Abandoned Grove olive oil, more for drizzling

2 teaspoons (10 mL) salt, more to taste

Juice of 1 lemon

8 ounces (225 g) burrata cheese, drained

2 tablespoons (30 mL) hot honey

1 teaspoon (5 mL) ground red chilies

¼ cup (60 mL) pistachios, toasted and chopped

Trim the woody ends, about 2 inches (5 cm), off the bottom of the rapini and discard. Cut the stems where they begin to branch into the leaves. Set the leaves aside.

Warm the oil in a large cast-iron skillet over high heat until it starts to shimmer. Add the rapini stems and sprinkle with 2 teaspoons (10 mL) of salt. Stir occasionally and cook for 2 to 3 minutes, until the stems are bright green but still quite crisp.

Add the leaves to the skillet. Cook for 1 to 2 minutes more, until the leaves have wilted and the stems are crisp-tender. Turn off the heat.

Sprinkle the lemon juice over top and toss to evenly coat the rapini in the oil and lemon juice.

Transfer the rapini to a large plate or platter. Tear the burrata open with your hands and scatter it over the rapini.

Drizzle with hot honey and more Abandoned Grove. Sprinkle with salt to taste, then the red chilies and chopped pistachios.

Serve warm with crusty bread.
