The Harvest
This Community Reserve was drawn from reserve capacity held across four groves: Balatro, San Donato, La Torre, and Vernalese. Each was harvested, milled, and evaluated independently before the oils were brought together.
The result reflects the season's structure across the groves, not a fixed formula.
The Oil
The nose opens with fresh grass, almond, and herbaceous notes. On the palate, bitterness and pungency rise in measured progression. The finish is clean, stable, and persistent.
An oil made for generous use, one that rewards simplicity and elevates the daily act of cooking.
Shipping
Oil is stored under nitrogen in temperature-controlled tanks and bottled only when shipments are prepared. Each lot is tested before release. Shipments to North America travel by air.
United States: free shipping on orders of $300 or more. Below that threshold, a shipping fee applies. The current import environment has introduced unpredictability that we cannot fully absorb. This pricing reflects our effort to keep the oil moving reliably to our American members without compromising how it arrives.
Canada: free shipping on every order.
