The Harvest

Three Expressions

It All Begins with a Rescued Tree.

Three expressions. One harvest.

Every bottle of Abandoned Grove olive oil begins in the same place - a rescued grove, tended by hand, harvested at the moment of peak phenolic expression. What happens from there produces three distinct oils, each with its own character and purpose.

One Tree, One Bottle

The tree's own expression.

One Tree, One Bottle is the purest expression of your guardianship. The olives from your individual tree are harvested, cold-pressed, and bottled separately - no blending, no mixing, no compromise.

Each bottle reflects the unique character of a single tree: its variety, its age, the soil it draws from, and the conditions of the season. No two are alike.

This is what olive oil was before industry arrived. One tree. One harvest. One bottle. Yours.

Founder's Reserve

Curated from the earliest pick.

Founder's Reserve is drawn from the very first olives to reach optimal maturity - the earliest pick of the harvest, when phenolic compounds are at their peak and the oil is most intensely flavourful.

It is a curated blend from across the grove, selected by Fil Bucchino for its balance of bitterness, pungency, and fruit. A small-batch oil that represents the finest the season has to offer.

Production is extremely limited. When it is gone, it is gone.

Community Reserve

Thirty percent for the common good.

Thirty percent of each grove's harvest is set aside as Community Reserve - a buffer that supports grove health, funds restoration, and provides oil for community events, education, and hospitality.

Community Reserve oil is available to guardians at member pricing. It is the same exceptional quality, from the same groves, milled at the same time - but allocated for the collective rather than the individual.

This is how abandoned groves sustain themselves. Quality funds care. Care restores land. Land produces quality.

The Process

From Grove to Glass.

01

Our Process Begins

In early autumn, each grove is assessed. The team walks the rows, checking fruit colour, firmness, and veraison — the moment olives begin turning from green to purple. Harvest is timed not by the calendar, but by the tree.

02

An Artform

Olives are hand-picked and gathered in breathable crates. No mechanical shaking, no bruising, no delay. From tree to crate to mill in under four hours — preserving the phenolic compounds that define extraordinary oil.

03

Master Milled

The olives are cold-pressed at our partner mill using a two-phase centrifuge system. Temperature is held below 27°C. No water is added. The process extracts oil with maximum polyphenol retention and minimal oxidation.

04

Nature’s Limit

Yield is not optimised — it is accepted. An average olive tree produces just 2–3 litres of premium extra virgin oil per season. This is the natural limit, and we do not push past it.

05

Unbiased by Design

Every batch is blind-tasted by a certified panel before release. If it does not meet the standard, it is not bottled under the Abandoned Grove name. There is no room for compromise.

06

Freshness in Flight

Oil is bottled at origin in dark glass to protect against light degradation, then shipped directly to guardians. No warehousing, no shelf time. From grove to glass, the chain is as short as it can be.
