Working with nature is a humbling experience and an exercise in finding serenity amidst the unpredictable. Our rejuvenated trees remind us of our privilege of sharing their gift each year.

This year’s olive harvest, true to form, stood as another testament to resilience, renewal, and the unending pursuit of quality, marking the 15th anniversary of the Founder’s Reserve.

Seasonal Reflections:

Winter and Spring: Cooler temperatures and replenishing rain mirrored historical patterns, fostering robust pollination and fruit set, setting the stage for a promising year.

Summer: Intense heat and drought stressed certain groves, particularly La Torre’s exposed sub-sections.

Day-Night Swings: Exceptional temperature fluctuations alongside timely fall rains enhanced phenolic accumulation and aromatic depth, setting a high standard for oil quality.

Groves Reunited

The Founder’s Reserve sees San Donato Grove return after a four-year absence, contributing the Frantoio cultivar to a carefully balanced 49/43/8 blend of Moraiolo, Frantoio, and Leccino olives.

Key Microclimates: The Reserve celebrates the diversity of our rejuvenated groves, with oils from Osteria’s thriving Moraiolo trees and Balatro’s Leccino adding depth, richness and complexity.

Crafting Excellence:

Exceptional Conditions: Ideal rainfall and temperatures, alongside no olive fly activity, allowed for meticulous harvesting at peak ripeness.

Masterful Extraction: Using a state of the art nitrogen-sealed mill, each small batch was elaborated at temperatures never surpassing 22 degrees Celcius followed by double filtration to ensuring peak freshness and to preserve maximum sensory expression.

Rigorous Selection: Daily sensory evaluations, verified by Fil Bucchino alongside some of the world's most trusted tasters, guided the final selection.
Extractions from October 16, 17, 21, 29, 30, 31, and November 4 and 10 were included in this Reserve.

Sensory

This Reserve opens with aromas of almond, artichoke, tomato vine, and fresh-cut grass woven with aromatic herbs and a hint of balsamic. It’s fluid and balanced on the palate, with predominant notes of fresh almond and bitter greens like radicchio and arugula, finishing with a pleasing and elongated peppery warmth.
