Why We Rejuvenate
Olive groves are being abandoned—not because they lack value, but because they can’t keep up with the pace and pressure of modern production.

Bringing Groves Back to Life
We begin where others walked away—clearing invasive overgrowth and restoring airflow, light, and space to each neglected tree.
From soil monitoring to reformative pruning, every step is tailored to help the grove regain strength—often over two to three years.
As vitality returns, we shape the trees using monocone or polycone pruning methods—balancing energy, land health, and harvest practicality.
It’s a symbiotic act of care—between the trees, the land, and the people who bring them back to life.
This isn’t industrial agriculture. It’s restoration work—one grove, one tree, one decision at a time.

Sustainment is about protecting what’s been brought back to life.
Once a grove is rejuvenated, ongoing care—like soil monitoring, seasonal pruning, cover cropping, and mindful harvesting—keeps it healthy, productive, and biodiverse.
A well-sustained grove isn’t just more resilient. It’s alive with beauty—welcoming to pollinators, rich with native species, and a vital part of the landscape.
It’s easier to care for a grove year after year than to bring it back from abandonment. Sustainment is how we ensure these trees—and the communities around them—continue to flourish.

Our work is inseparable from the farmers, artisans, and communities who make it possible.
We collaborate with social cooperative COOP21, engaging locals through the ASTER and ASTER 2 programs—offering hands-on roles and purpose-driven work in the groves.
We also partner with Olivares Vivos, whose expertise helps us monitor and enhance biodiversity in each rejuvenated landscape.
From fair compensation to local supply chains, every decision we make supports micro-regional agriculture—and ensures each bottle uplifts the hands and lives behind it.
