With deep knowledge and year-round dedication, our team cares for each rejuvenated grove’s soil and tree, ensuring the healthy development of every single olive.
The harvest is timed with precision to protect both the olives and the trees. It begins with a clear vision of the desired sensory profile, followed by the selective picking of only the healthiest olives.
Though we are panel tasters ourselves, every oil undergoes chemical and residual analysis and a blind sensory evaluation by certified panels, ensuring unbiased quality at every level.
We don’t promise unlimited oil, each grove has its natural limits, and we respect them.
We never buy outside olives or blend external oil to increase production.
Our extra virgin oils are crafted with uncompromising care, testing, and traceability, balancing phenolic richness, sensory depth, health, and longevity.
For 15 harvests, they have measured 450% higher in fruitiness, nearly 90% lower in acidity, and two-thirds lower in peroxides than international thresholds. Oleic acid consistently rises above 75%, with active phenols averaging 500mg/kg, delivering both health benefits and sensory pleasure. Every harvest is tested for pesticides and residual contamination, always returning zero. The result is unmatched purity, stability, and sensory balance in extra virgin olive oil.
