Harvest as an Art Form
The harvest is timed with precision to protect both the olives and the trees. It begins with a clear vision of the desired sensory profile, followed by the selective picking of only the healthiest olives—at the grove-subsection level—when each cultivar reaches its ideal point of maturation.
Precision at the Mill
Our master millers and world-renowned olive oil tasters take over—skillfully extracting and beginning the transformation process in a state-of-the-art mill. They taste, calibrate, and refine in pursuit of the envisioned sensory and phenolic profile. Each drop is immediately filtered and stored in temperature-controlled, oxygen-free fusti for continued testing and evaluation.

Unbiased by Design
Though we are expert tasters ourselves, every oil undergoes independent chemical analysis and blind sensory evaluation by certified panels—ensuring unbiased quality at every level.

Nature Sets the Limit
We don’t promise unlimited oil—each grove has its natural limits, and we respect them. We never buy outside olives or blend external oil to increase production.

Bottled under nitrogen and under the strict supervision of the Abandoned Grove team, then air-shipped immediately to preserve peak integrity and seasonal character.

This is the core of your membership. Each tree yields two bottles of extra virgin olive oil per year—no more. That oil is always grove-specific, tied to your individual tree in a specific rejuvenated grove. Originally, one bottle was automatically donated to the community, but now both are yours to keep, gift, or donate. Every drop reflects the exact place, season, and tree it came from.
Curated once a year by Fil Bucchino, the Founder’s Reserve is a limited release of the most expressive oil from select trees across all our rejuvenated groves. These oils are hand-selected from standout micro-lots and represent the highest expression of each season. Bottled by the case and offered exclusively to members, it is never made available to the public.
The Community Reserve is a small pool of oil made from trees not tied to specific members but still nurtured to the same exacting standards. Some of this oil is grove-specific, coming from designated reserve trees in a single grove. Other times, the oil may come from different groves that produced a seasonal surplus. The reserve supports members who wish to request additional oil and helps extend the mission through chefs, educators, and aligned partners. Donated bottles from members are never resold—only used to grow the movement, one pour at a time.
We rank among the top 1% of extra virgin olive oil producers in the world—and we’re the first to produce 100% of our oil from rescued groves. Every bottle is crafted in small batches by a team that lives in the grove, works in the mill, and obsesses over every detail.
We don’t blend. We’ve never outsourced. We bottle at the source under nitrogen and have mastered overseas transport to preserve peak freshness.
While crafted by world-renowned experts, our oils are still verified by independent certified panels through blind sensory and chemical testing. We consistently exceed global standards:
<0.1% acidity, <4 peroxide value, >75% oleic acid, and <0.01 for environmental and multi-residuals—far beyond what organic certification alone guarantees—while balancing phenolic richness, sensory depth, and health benefits.

Oil is extracted in the fall—typically between mid-October and early November. One Tree One Bottle memberships ship as soon as all groves have completed harvest and passed chemical and sensory testing—usually shortly after harvest concludes.
Founder’s Reserve is the first oil to be released each season, arriving in mid to late November as an early-harvest allocation curated by Fil.
Starting in 2026, Community Reserve allocations will be delivered quarterly to support seasonal needs and mission-aligned outreach.
