OUR PROCESS

ONCE A GROVE IS REJUVENATED, IT ENTERS OUR SUSTAIN PROGRAM, LEADING UP TO THE HARVEST.

Abandoned Grove's extra virgin olive oil begins with profound knowledge and dedication to caring for the grove and its trees throughout the year, a commitment that extends to ensuring the healthy growth of each olive.

THE ART AND SCIENCE OF TIMELY HARVESTING IS PRECISELY EXECUTED, ENSURING THE TREES AND OLIVES REMAIN UNHARMED.

WITHIN A FEW HOURS OF HARVEST, OUR MASTER MILLERS AND WORLD-RENOWNED OLIVE OIL TASTERS TAKE OVER.

Skillfully extracting the oil in a state-of-the-art, modern mill. They taste, calibrate, and recalibrate in pursuit of the envisioned sensory profile. Each drop is immediately filtered and stored in temperature-controlled, oxygen-free fusti for further testing and tasting.

AFTER OUR RIGOROUS INTERNAL TESTING, WE ELIMINATE BIAS BY HAVING THE OIL EVALUATED BY EXTERNAL CHEMICAL AND SENSORY EXPERTS TO UPHOLD THE HIGHEST QUALITY STANDARDS.

The oil is subjected to chemical analysis by a certified lab and an organoleptic panel evaluation by another set of professional tasters.

Production for each lot respects the natural yield of the tree and is limited to the grove's tree count.

To maintain our oil's integrity, no olives are purchased from outside sources, nor is any external oil blended in to increase production volumes.

THE OIL IS BOTTLES OXYGEN-FREE AT THE SOURCE UNDER THE STRICT SUPERVISION BY ABANDONED GROVE, THEN SHIPPED IMMEDIATELY TO MAINTAIN ITS NATURAL INTEGRITY AND THE UNIQUE SEASONAL CHARACTERISTICS OF EXCEPTIONAL EXTRA VIRGIN OLIVE OIL.


***In our pursuit of balancing the oil's quality and peak condition with our commitment to eco-conscious practices, we've eliminated the extra steps of bottling once in North America. However, due to the product's nature and our dedication to preserving its peak attributes and freshness, air-shipping remains unavoidable for now.
